What can I say, I like to rhyme and sing when cooking…..totally off-key of course!

This week I thought I would tantalise your taste buds. So without further adieu, enter Starbrite’s Superfood Pesto recipe.

Simplicity in the creative process

This is such a super simple recipe to make. And quick. You will have pesto in less than 10 minutes.

There is no actual ‘cooking’; minimal mess (all contained within the blender/food processor); and just a couple minutes of prep time before you waz it all up and hey presto, you have pesto! Wow I am killing it with the rhymes today!

Even if you are a complete novice in the kitchen, provided you can operate a blender or food processor (this may knock my Dad out of the running!) and handle the cleanup, you should be good to go.

Starbrite’s Superfood Pesto is oil-free, dairy-free, grain-free and gluten-free. Phew! Think we have covered most  major ‘~free of’ bases. And there is no added sugar, so even better!

Each ingredient has been carefully considered for its taste and health benefits. For example:

  • Hail Kale! This dark leafy green is chock-full of phytochemicals, antioxidants and essential vitamins.
  • Nutritional yeast flakes provide a nice little boost of vitamin B12.
  • Walnuts, the powerful little brain-shaped food that they are, contribute some powerful antioxidant benefits.
  • Spinach is nutrient-dense and packs a healthy punch.

But most importantly, my pesto is completely delicious!

In case you still need convincing (??!!) to make this green baby, here are just some of the awesome ways you can use it:

  • A dip. Forget the store-bought varieties, this is waaayyy tastier and healthier!
  • A pasta sauce. Being gluten intolerant I lurve it on raw or cooked zoodles (aka zucchini noodles), but it goes well on any pasta.
  • On nachos. So. So. Good.
  • Drizzled across a pizza.
  • Swap out your usual mayo or butter on your sandwich and slap on some pesto insteado! Oh I make myself laugh…….someone stop me!!

Makes roughly 1-1.5 cups

  • 2 cloves garlic
  • 1/2 cup walnuts
  • 2 cups loosely packed fresh basil leaves
  • 1/2 cup loosely packed fresh kale leaves, stems removed
  • 1/2 cup loosely packed fresh spinach leaves
  • 1/2 cup fresh coriander leaves
  • 3/4 teaspoon salt flakes
  • 1/2 cup vegetable broth
  • 1/4 cup nutritional yeast flakes (also known as savory yeast flakes; don’t confuse them with brewers yeast)
  • 1 tablespoon fresh lemon juice
  • Ground black pepper to taste
  • Water to thin as needed


  1. Pulse the garlic and walnuts into a coarse mixture in a food processor or blender.
  2. Add the basil, kale, spinach, coriander, salt, broth, nutritional yeast and lemon juice and purée to desired consistency. Add water to thin as needed. Taste for salt and season with black pepper.
  3. Keep sealed (I store mine in a glass jar) and refrigerated.


  • You can have a lot of foodie fun with this recipe and mix it up. Like a more traditional pesto? Swap out the walnuts for pine nuts or use all spinach instead of the half n’ half kale/spinach combo. The key is to just get experimenting!
  • When making any recipe it all comes down to your taste buds. Not a huge coriander fan? No worries – simply cut down on the suggested amount. Pesto too watery? Throw in some more walnuts or greens. You get the picture 🙂

    No more oily pesto for me!!
